Certifications

Billy has been a certified chef for 34 years.  His first certification was as a pastry chef.  His passion for using only the finest ingredients to create tasteful works of art is unwavering.  “I learned most desserts from my mother and grandmother.  They were known all over the Texas Panhandle for their baked goods.  Plus, I was in culinary school, working in restaurants, and I watched how people reacted.  People get weird over their proteins!  Overdone, underdone, too dry…people are very hard to satisfy.  But, NO ONE yelled at the guy with the chocolate.  I decided early on, I wanted to be that guy!”
